Whenever I’m craving a low-carb meal with extra protein and fiber, I turn to this Keto Chicken Thighs recipe that includes cabbage and cauliflower.
You only need a few minutes prep time, so this is the perfect recipe for a busy day.
Why You Need This Recipe
- This easy slow cooker chicken recipe takes only 5-6 hours on high to cook through, or you can cook it for 8-10 hours on low heat. You can use chicken thighs (bone-in or boneless) or chicken cutlets, whichever you prefer.
- Honestly, this is such a great, easy, and comforting meal that you serve right out of the pot. If you’re not on a keto or low-carb diet, you can pair it with cooked rice, pasta, or mashed potatoes. Otherwise, it’s perfectly delicious served as is.
- For my friends who are eating meat after being vegetarian, this is an easy-to-digest lean protein recipe that is also high in vegetables.
- This recipe is also great for people who are on a gluten and dairy free diet, a sugar detox diet, or who are on a sugar free diet plan. It is high in protein, fiber, and other nutrients.
Key Ingredients
- Chicken thighs are budget-friendly, easy to find, and so flavorful. Use the bone-in chicken thighs or the boneless chicken thighs (the bone-in will have more flavor). See more of my tips for eating healthy on a budget or my list of the best sugar-free foods.
- Cauliflower rice is really easy to find these days. But it riced in a bag to make your life easy. Or, you can make your own cauliflower rice using a food processor. You could also use frozen cauliflower (see my guide for how to freeze cauliflower).
- Cabbage is also budget-friendly and can be found year round. You can even use frozen cabbage (see my guide for how to freeze cabbage).
- Chicken broth adds flavor and helps keep the chicken from drying out.
See the full recipe card at the end of this post for the exact measurements.
Recipe Steps
Step One
Chop your cabbage and place it in the bottom of your crockpot. Then, spread the cauliflower rice on top of the cabbage.
One of other reasons I like using a slow-cooker is that it’s made from ceramic which is one of the safest materials for cookware.
Step Two
Place the chicken on top of the veggies and add the broth and seasonings.
Step Three
Put the lid on the slow cooker and set the timer to 6 hours on high heat. You can also cook it for 8-10 hours on low heat.
Step Four
Once the cooking time is up, remove the lid, stir the ingredients, and serve hot.
Recipes Tips
- You can use bone-in or boneless chicken thighs in this recipe. You can also use chicken breasts, if you prefer.
- Use green cabbage or red cabbage, either one is delicious.
- Feel free to get creative with your seasonings. Smoked paprika, chili powder, or curry would also be delicious.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat before serving.

I felt like 8 hours on HIGH was a little extreme. I read the comments and decided to put in on low for 8 hours. Cabbage was soft and chicken was cooked. I doubled the Italian seasoning and garlic power, 1.5x the salt. Next time I will triple the salt or add paprika. But it isn’t bad if you get the cooking time and temperature right. I just add a little more salt to my bowl and it’s great.
Hi Carrie,
I just finished eating this recipe and enjoyed it so much! It was easy to prep the ingredients and then just wait for the slow cooker to do its work. I also added a sweet Vidalia onion and minced garlic. I think next time I make it, I will add a little white vinegar with the broth just because I love my cabbage cooked down in that acid! Lemon might be a nice touch for another time as well. I let mine cook in the crock pot for 5 hours on high. The chicken was juicy and falling apart! Definitely a hit with me!
Sounds good. How would this work in an instant pot?
You would just need 10 minutes at high pressure with at least 1 cup of broth.
The time listed on the printed out recipe is 6-8 hours on high in crock pot. I shut it off at 5 hours and still had a pot of mushy cabbage. Tossed the veggies and hoping to make chicken salad from the dried out chicken thighs.
The cabbage is meant to be soft at the end, I’m sorry you didn’t get what you expected.
If you choose to do cooked rice do you add it to crockpot or do you just leave out the rice and cauli rice?
If you want to serve this with cooked regular rice, you would serve that at the end. You can still add the cauliflower rice though.
Easy, quick and tasty! Thank you!
Woo hoo! Thanks, Marley!
The recipe went together so effortlessly, truly a fix it and forget it meal, it is delicious! Thanks Carrie !
Fantastic, thanks Donna! So glad you enjoyed it.
Looks delicious!! Can you use breasts instead of thighs? Asking because that is what I currently have.
Yes, absolutely! You can either use either cut of chicken.
My family found this recipe to be bland, hoping to use the chicken in a different dish.
So sorry to hear that!
One of my favorite meals to throw together.
