- 2 cups pineapple juice (preferably fresh, but store-bought is fine)
- 1 cup coconut water (look for brands with no added sugar)
- 2 limes, juiced (about 1/4 cup)
- 2 cups ice cubes
- Fresh mint leaves (optional, for garnishing)
Instructions
- In a large pitcher or mixing bowl, combine the pineapple juice and coconut water.
- Stir in the lime juice.
- Fill glasses with ice cubes and pour the pineapple coconut water mixture over the ice.
- Garnish with fresh mint and serve immediately.
Notes
- You can easily double this recipe to make more servings.
- If you purchase canned or bottled pineapple juice, make sure that it has no added sugars.
- If you want a sweeter drink, consider stirring in 1-2 tablespoons of raw honey or agave syrup.
- If you want to prepare this drink ahead of time, you can combine the ingredients in a pitcher, stir, and then cover. Store in the refrigerator for up to 24 hours and then stir again and serve.
