Cucumber juice is an incredibly refreshing beverage that you can make at any time of year.

Since cucumbers have such a high water content, this juice is ideal for a hot summer day to beat the summer heat. Try this easy cucumber juice recipe as a great way to hydrate whenever you’re feeling dehydrated.

This fresh juice also is great as a morning beverage since it’s light and full of nutrients.

  • You can make this simple juice in a juicer or a blender. I’ve included instructions for both methods. You can even use a food processor if you like.
  • You only need several ingredients including cucumbers, green apple, lemon, fresh ginger, and mint. This is very similar to my Cucumber Apple Juice recipe for weight loss.

  • Cucumbers: You can use any type including English cucumbers or Persian cucumbers. Cucumbers are on my list of the best vegetables to juice and are also on my list of the best juice ingredients for bloating.   • Lemon: Use a fresh lemon for this juice (as opposed to jarred lemon juice) to get the most vitamin C and fresh lemony flavor. You can also use lime juice.
  • Ginger: This ingredient adds a bit of spicy kick to the juice. Look for ginger root at the grocery store.
  • Mint: I adore adding fresh mint to cucumber juice; it adds a very nice flavor and is on my list of herbs to be juiced.

  • Want to make pure cucumber juice? Try just juicing cucumbers with either lemon or lime for a bit of flavor.

Recipe Steps Using Blender

Let me show you how easy it is to make this homemade cucumber juice using a blender. Keep scrolling for juicer instructions.

Step One: Wash and prep your veggies.

To make this cucumber juice in a high-powered blender, simply combine the ingredients in the pitcher of a high-speed blender, along with 1/4 cup of water. You can also use a food processor if you like.

Step Two: blend the ingredients until smooth.

Step Three: Blend and then strain the juice through a nut milk bag, a fine mesh strainer, or fine mesh sieve to get rid of the pulp (or save it and make green juice crackers).

Step Four: Serve your cucumber juice immediately or chill and serve.

If using a juicer, feed the cucumbers through the juicing tube of a cold press juicer, masticating juicer, or centrifugal juicer.

Step Three

Serve your cucumber juice immediately or chill and serve. I like to pour it over ice cubes on hot summer days. It looks pretty served in a mason jar or pretty glasses with some fresh cucumber slices on the rim.

Green juices in general are best served right after they are made for the most nutritional benefits.

  • You can use whatever type of whole cucumber you like including English or Persian. You also do not have to peel the cucumbers before juicing them.
  • Store any leftover juice in a covered container in the refrigerator for up to 2 days.

What type of cucumbers should I use for juicing?

You can use regular or hothouse cucumbers. There is a price difference between them. The hothouse are usually wrapped in plastic as their skin is softer and more easily damaged; they are also generally seedless. You can try a batch with each type and see which taste you prefer.

Should I buy organic cucumbers to juice?

This is a personal decision, but because juicing uses the entirety of the vegetable (especially when using a blender vs a juicer!) you might want to go with organic. Whatever you choose, make sure and look for unblemished cucumbers or fruit and wash very well.

Can cucumber juice help with weight loss?

Do I need to drink cucumber juice on an empty stomach?

Ingredients

  • 2 cucumbers (I used English cucumbers but you can use any type; see notes for peeling instructions)
  • 2 green apples
  • 1 lemon, peeled
  • 1 one-inch piece fresh ginger, peeled
  • 4 mint leaves (optional, for added flavor)
  • 1 cup water, if using a blender to make the juice (you don’t need the water if you are using a juicer)

Instructions

  1. Cut the cucumber and apples into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer.
  2. If you are using a juicer, then run the vegetable and fruit pieces through the juicer. Collect the juice in a pitcher and serve immediately.
  3. If you are using a food processor or blender, add the cucumber, apple, lemon, ginger, mint, and water to the base. Blend or process on high for 20-30 seconds, or until the mixture is smooth.
  4. Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Discard the collected pulp, or save it and use it for another purpose.
  5. Serve the juice immediately.

Notes

  1. You can easily double or triple this recipe for more servings.
  2. Fresh juice is best served right after it’s made. But, it can be stored in a covered container in the refrigerator for up to 4 days.
  3. You can peel the cucumber if you want to, but you don’t have to. Some people find that the cucumber peel is difficult to digest.
