- 2 cups frozen sweet cherries
- 1 cup full-fat coconut milk
- 1/2 teaspoon vanilla extract
- 1/2 cup maple syrup
Instructions
- Combine the frozen cherries, coconut milk, vanilla, and maple syrup in a blender or food processor and process until smooth.
- Pour the cherry-coconut mixtures into your popsicle molds.
- Freeze for at least four hours, and up to 24 hours.

- Want a version using a whole foods sweetener? Leave out the maple syrup and use 1/2 cup of pitted dates instead.
- Try dipping your frozen cherry popsicles in some melted chocolate and top with some shredded coconut for a truly gourmet and decadent version!
- Store any leftover popsicles in the freezer for up to several weeks.
- If you are using fresh cherries instead of frozen cherries, you’ll need to freeze the popsicles a little longer, probably 6-8 hours, before serving.
